Sausage With Citrus Vinaigrette

This recipe can be served as an appetizer or as a main course for your family. Cooking the sausage becomes very simple and practical when using the Brazilian Flame accessories to make a perfect barbecue.


  • 2 lbs of sausage of your choice
  • 1 Medium red onion
  • 4 Medium tomatoes
  • 2 Large celery stems
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 3 tbsp Fresh chopped parsley
  • 3 tbsp Fresh chopped green onions
  • 2 Lemons
  • 1 Orange
  • 2 Tangerines
  • 5 tsp Extra virgin olive oil
  • 1 tsp Kosher salt
  • 1⁄4 tsp Ground black pepper
  • 1⁄2 tsp Garlic powder
  • 1⁄2 tsp Onion powder
  • 1⁄2 tsp Sweet paprika

After removing the sausages from the packaging, pat them dry with paper towels. Utilize the vegetable baskets or the single skewer accessory. If using a basket, place the sausages so that they are properly aligned, and then close the basket. If you are using a skewer, place the sausages in the center transversely, so they are aligned and sequential.

Observe the maximum length of the skewer to ensure that all sausages on skewers cook evenly and directly through the preheated Brazilian Flame Grill Rotisserie. Grill them until they reach a golden color. Serve immediately with a drizzle of vinaigrette on top, or as a side dish.

To begin, sanitize all vegetables and fruits: Cut the red onion, tomatoes, celery, and red, orange, and yellow peppers (seedless) into 1⁄4 inch pieces.

Add the zests of lemon, orange, and tangerine to the chopped vegetables; add the lemon, orange, and tangerine juices, chopped parsley and green onions, olive oil, salt, ground pepper, paprika, garlic, and onion powder.  Mix well and put in the refrigerator for 10 minutes before serving.
