Preparation Items:

  • 2 pounds lamb (leg or shoulder), cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • 2 cloves garlic, minced
  • 1 lemon, juice and zest
  • For the Tzatziki Sauce:
    • 1 cup Greek yogurt
    • 1 cucumber, seeded and finely grated
    • 2 cloves garlic, minced
    • 2 tablespoons fresh dill, chopped
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

Preparation Method:

  • Marinating Lamb: In a large bowl, combine olive oil, dried oregano, salt, black pepper, paprika, minced garlic, and the juice and zest of one lemon. Add the lamb cubes and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • Making Tzatziki Sauce: Combine Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, and lemon juice in a bowl. Season with salt and pepper, to taste. Mix well and chill in the refrigerator until ready to serve.
  • Prepping Kebabs: Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers.
  • Grilling Kebabs: Add the skewers to the rotisserie grill and grill the lamb kebabs for 15-20 minutes; let them cook until they are browned on all sides and cooked to your preferred level of doneness.
  • Serving: Serve the grilled lamb kebabs with the chilled tzatziki sauce on the side.
