Quantity:

  • Serves 4

Preparation Items:

  • 1 cedar plank (6x14 inches), soaked in water for at least 2 hours
  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill, chopped
  • 2 garlic cloves, minced
  • 1 lemon, thinly sliced
  • Salt to taste
  • Freshly ground black pepper to taste

Preparation Method:

  • Preparing the Plank: Soak the cedar plank in water for at least 2 hours to prevent it from burning on the grill.
  • Seasoning the Salmon: Pat the salmon fillets dry with paper towels. Brush each fillet with olive oil, then season with salt and freshly ground black pepper. Sprinkle the chopped dill and minced garlic evenly over the fillets.
  • Preheat the Brazilian Flame® Rotisserie Grill: Preheat your grill to medium-high heat.
  • Placing Salmon on the Plank: Place the soaked cedar plank on the grill for about 3 minutes, until it begins to smoke and char. Flip the plank over and place the salmon fillets on the charred side, skin-side down. Top each fillet with a couple of lemon slices.
  • Grilling: On the fish basket, cook the salmon for about 25 minutes, depending on the thickness of the fillets and desired doneness. There's no need to flip the salmon; it cooks through from the plank and the grill's rotisserie heat.
  • Serving: Carefully remove the plank from the grill. Allow it to cool for a few minutes before serving the salmon directly from the plank for added presentation.

Preparation Time:

  • Total time: 1 hours 30 minutes (including plank soaking)
  • Active time on the rotisserie: 20 minutes
  • Passive time (soaking & grilling): 2 hours 10 minutes

Drink Pairing:

  • A chilled glass of Pinot Grigio or Sauvignon Blanc pairs beautifully with the smoky, herby flavors of the cedar-planked salmon. These wines complement the richness of the salmon without overwhelming its delicate flavor. For a non-alcoholic option, iced green tea with a squeeze of lemon enhances the meal's freshness.
